Long Run Homemade Waffles
1 cup flour
1/2 Tbsp baking powder
1/4 teaspoon salt
1 cup almond milk
1 large egg
1/4 cup melted butter (I’ll also try with non-fat Greek Yogurt (I’d love to add some protein to these), applesauce, and mashed bananas next time – will edit here once the verdict is in!)
1/2 teaspoon vanilla extract
Whisk the flour, baking powder and salt together in a medium bowl. In
another bowl, beat the milk, eggs, melted butter and vanilla extract.
Pour the milk mixture over the dry mixture and stir with a fork until
just combined. Let sit five minutes to allow the baking powder to activate.
Makes two beautiful waffles in a standard waffle maker! Top with fruit, peanut butter, syrup, and/or walnuts.
