Apple Cinnamon Muffins

Preheat oven to 450.

Cream in a bowl:
1 stick butter
1/2 cup white granulated sugar
1/4 cup brown sugar

1 egg
1/2 teaspoon vanilla

Beat and add:
1 cup fat free Greek yogurt

Sift in:
1 cup all purpose flour
1 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 Tablespoon cinnamon

Once everything is mixed, add in 2 Granny Smith or other tart apples, peeled, cored and chopped small.

Fill 12 greased muffin cups. Sprinkle brown sugar on tops of muffins.  Bake muffins for 10
minutes, reduce oven temp to 400 and bake 5 minutes longer. They’re done when
golden on edges and a toothpick inserted in center comes out clean.
